I’m using Torque with my 2006 Scion tC and the app works great except for the Fuel level/fuel pressure.

Is there a way to scan the car for supported PID’s and compare with what Torque is using?

There will be a list of sensors available in the adapter status screen in the next version that shows you the OBD2 supported sensors that the ECU supports. Hopefully about a week before the update is sent out now.
