Customize PIDs to universal what? To universal PIDs? To universal cars? To universal smartphones/headunits?
It is not clear what do you want to achieve. Please reword your question to it be understandable to others.

what i mean is change the header and pid like change it to 7e0 and pid id to 2100

Change the header and pid for what? for existing PIDs? for newly imported PIDs? for OBDII PIDs?
